2021 The Assassin
The Cabernet Sauvignon grapes for this vintage were sourced from the Adelaida District on Paso Robles' Westside, where the limestone soils mirror those of Bordeaux. While the daytime temperatures are warm enough to ripen the grapes easily, the coastal influence ushers in cool nights, providing the ideal conditions for the development of beautifully balanced wines.
The near perfect conditions of the 2021 growing season gave us fruit of exceptional quality. Yields were relatively light but flavor development was exceptional. Firm, ripe tannins and fresh acidity provided the framework for elegant structure and age worthiness. The wine was aged for 18 months in new French and American oak and the final blend created, using 8% Cabernet Franc, 5% Malbec and 2% Petit Verdot.
Bursting with blackcurrant and black cherry flavors, the 2021 Assassin is bold yet elegant. While we expect the wine will age gracefully for the next 10 to 15 years, it's certainly ready to drink now. Only 100 cases were produced.
